Something for the kids…

Summertime and the kids are either at camp or in my case at home. So, as a good father and to reduce the migraines I’ve come up with some easy cooking to keep them occupied in the mornings.
Breakfast at 6am! Of course the youngest is up first…and hungry! A bowl of Cheerios and milk keeps ‘em quiet, for now. If you remember the Bill Cosby routine “chocolate cake” has all the essentials including, milk, eggs and wheat, unfortunately, no cake on hand.
Here’s a list of fun breakfast’s:
“Smiley” the egg in the hole- Take a piece of bread and cut a whole in the middle (small shot glass works best), butter both sides and place in the skillet, add a sunny side up egg to the middle, flip over to cook the other side, serve with an orange slice as a mouth, bacon eyebrows, fruit salad hair and raisin eyes. I used cantaloupe slices for ears once and created a “Prince Charles”.
Chocolate chip pancakes-not original but goes over really well!
Homemade country potato- Boil, peeled whole potatoes and let cool. In a well oiled frypan add cut onions and fresh garlic, slice the potato in small segments and fry with the onions. Add black pepper, salt and sweet paprika to taste, let cook until nice and crispy – In another frypan make your favorite eggs, our family loves scrambled! Serve together.
Yummy french toast – Do you have bread in the freezer? Now is the time to use it up! We keep a loaf of uncut frozen challah bread on hand for those emergencies. While still frozen, cut generous slices of bread, half them on the angle, you now have triangle pieces (easy to fit in the pan). In a mixing bowl combine, eggs, milk, salt, pepper and cinnamon. Prepare a frypan with butter, dip the bread and fry until golden. Serve with either maple syrup and icing sugar, jam or chocolate sauce.
Let the kids help you set the table, mix the ingredients or as I do, entertain them by telling a story about the ingredients you’re about to use. Do you know where chocolate chips come from? The chocolate tree of course! I have already enrolled my kids in therapy sessions… thank you!
